Descaling a Hoshizaki ice machine:
when, how and by whom
Limescale is by far the most common cause of declining ice production. It creeps in, and you only notice when the bin runs empty on a warm day. This guide shows how to recognise scale, what you may do yourself, what to leave to a service engineer and how to prevent the problem for good.

In short
Keep the storage bin, door gasket and air filters clean yourself, monthly. Have the water system cleaned and descaled by a service engineer at least twice a year, more often in hard water areas. Use only a descaler released by the manufacturer, never vinegar or acid. And most importantly: prevention is cheaper than descaling, so fit a water filter or softener upstream.
Why limescale hits an ice machine so hard
An ice machine repeatedly freezes fresh tap water onto an evaporator. Whatever minerals are in that water stay behind: the water turns into ice, the scale does not. Every cycle therefore leaves a thin layer on exactly the component where heat transfer has to happen.
That explains why scale hurts far faster here than in, say, a boiler. A scale layer on the evaporator insulates. The machine has to cool longer for the same cube, the cycle gets longer, daily output falls and energy consumption rises. At the same time cubes release less easily, become smaller and cloudy, and stick together in the bin.

What you do and what the engineer does
This is where most things go wrong in practice. The line runs at the water system.

Important: Isolate the machine from the power supply before cleaning anything, and never use vinegar, hydrochloric acid or a hardware store descaler. Those products attack copper lines, plastic parts and the evaporator. Only products released by the manufacturer for ice machines, at the dosage and contact time in your model manual.
The monthly routine you handle yourself
1. Switch the machine off
Turn the machine off and unplug it, or switch off the circuit. Do this even if you are only cleaning the bin.
2. Empty the bin
Remove all the ice and discard it, even if it looks fine: it has been sitting in a bin you are about to clean.
3. Clean and sanitise the bin
Wipe the interior, the door and the sloped base with a clean cloth and the diluted solution stated in your model manual. Rinse with clean water.
4. Air filter
Remove the filter at the front or side, rinse it with lukewarm water and let it dry fully before refitting. A clogged filter costs output immediately.
5. Exterior and door gasket
Wipe down with a mild cleaner. Pay attention to the gasket: mould growth there is a hygiene problem, not a cosmetic one.
6. Switch on and discard the first harvest
Switch the machine back on and discard the first full harvest. After that the bin is ready for service again.

What we see on installations in practice
We install Hoshizaki ice machines across the Netherlands, and water hardness varies considerably by region. Where we install without water treatment because the customer wants to leave it out, the pattern always comes back: nothing wrong in the first year, smaller cubes in the second, and in the third a service visit that costs more than the filter that should have been fitted.
The second recurring situation is a machine that suddenly underproduces on the first genuinely warm days of the season. Almost always it turns out the air filter has not been out for months and the machine sits in a room that is too warm and too tight. Limescale gets the blame, but it is simply an ice machine that cannot shed its heat.
Practical advice: schedule the major service in spring, not in July. A machine checked and descaled in March will make it through the summer peak; a machine that fails in July costs you the peak itself.
Preventing scale: water treatment and placement
Water filter with scale inhibition. The baseline measure with moderately hard water. It holds back part of the minerals and also improves the taste and clarity of the ice. Replace the cartridge in time, otherwise it works against you.
Water softener. The better solution with genuinely hard water, especially when a combi oven and a dishwasher share the same supply. One central installation then protects several appliances at once.
Placement. Keep clearance around the unit for air circulation and do not place it next to an oven or fryer. An environment that is too warm reduces output and loads the whole system.
A named owner. Put filter and bin maintenance on the cleaning schedule with a name next to it. Maintenance that belongs to nobody does not happen.

How often should a Hoshizaki ice machine be descaled?
Hoshizaki advises having the water system cleaned and sanitised by a trained service engineer at least twice a year. In hard water areas or with intensive use, three to four times a year is more realistic. Cleaning the storage bin and the exterior is something you do yourself, usually monthly.
Can I descale my ice machine myself?
You may and should keep the storage bin, the door gasket and the air filters clean yourself. Hoshizaki explicitly leaves descaling of the water system to a service engineer: it involves parts that sit under water and power, and an incorrectly applied descaler can damage the evaporator. Always follow the manual for your specific model.
What are the first signs of limescale?
Smaller or incomplete cubes, cloudy ice, cubes sticking together, longer cycle times and a machine that keeps running without filling the bin. Often you can also hear that ejecting the cubes has become harder. If no ice is produced at all, limescale is one of the first causes to rule out.
Which product do you use to descale an ice machine?
Only a descaler released by the manufacturer for ice machines, at the dosage and contact time given in your model manual. Never use household vinegar, hydrochloric acid or a generic hardware store descaler: these attack copper lines, plastic parts and the evaporator. How do I prevent limescale in an ice machine?
With water treatment. A water filter with a scale inhibiting cartridge or, with genuinely hard water, a water softener is the cheapest measure you can take: it saves service visits, keeps ice clarity consistent and extends evaporator life. We recommend it as standard when installing in a hard water area.
Is descaling still worthwhile on an old ice machine?
Up to a point. Once the evaporator is badly affected, capacity will not fully return and energy consumption stays high. On a machine of ten years or older with recurring problems, replacement is often cheaper than continued repairs, particularly since new R290 models are considerably more efficient.
