Hoshizaki maintenance:
complete checklist

A Hoshizaki refrigerator or freezer lasts 12 to 15 years with good maintenance. Without maintenance this halves. This checklist reduces your breakdown risk, lowers energy consumption and extends the service life of your units.

Most important maintenance

Monthly: vacuum condenser + check door seal. Every 3 months: replace ice maker water filter + thorough condenser cleaning. Every 6 months: ice maker disinfection + full technician inspection. Never neglect condenser maintenance – it is the most common cause of failure.

Daily maintenance: 5 minutes per day

Daily maintenance of your Hoshizaki units takes five minutes and prevents 80 per cent of the most common faults. These tasks should be part of your kitchen team's fixed end-of-shift routine.

Wipe exterior with a damp cloth (no aggressive cleaners, no abrasive pads)
Rinse ice maker storage bin with warm water.
Check that the door closes fully and the seal is not deformed.
Wipe condensate from the drip tray.
Check temperature display: refrigerator 0–4°C, freezer minus 18 to minus 22°C.

Weekly: 15 minutes

Weekly maintenance focuses on the components that govern airflow and filtration. Set a fixed time (e.g. Monday morning before service starts) so nothing gets forgotten.

Remove and clean the ice maker filter grille (warm water, soft brush if needed)
Thoroughly clean drip tray and drain channel, check for blockages.
Dust condenser ventilation grille.
Check door hinges for wear.
Clean door seal with mild washing-up liquid (grease and crumbs cause leaks)

Monthly: condenser is critical

A dirty condenser is the primary cause of premature failure in Hoshizaki refrigeration. A 3 mm dust layer increases energy consumption by 30 per cent and puts extra strain on the compressor. Monthly cleaning is essential.

Switch off unit and wait 5 minutes.
Remove ventilation grille (clips off or screwed)
Vacuum condenser fins with a soft brush attachment (do not brush too hard – fins are fragile)
For stubborn grease or dust: use compressed air (blow from outside inward)
Check ice maker water pump for limescale deposits.
Test door seal with a sheet of paper: it must stay clamped when door is closed.
Clean ice maker water tank and spray arm.

Every 3 months: water filter and deep clean

Every 3 months the water filter of your ice maker must be replaced, regardless of visible condition. A saturated filter reduces ice production by up to 20 per cent and causes limescale deposits on the evaporator.

Replace ice maker water filter (original Hoshizaki, not a generic substitute)
Thorough condenser cleaning with suitable degreasing spray
Check refrigeration circuit for signs of leakage (if in doubt: call a technician)
Test thermal protection and alarms
Document maintenance in the log book (required for HACCP documentation)

Annually: call in a technician

Annually an authorised Hoshizaki technician must carry out a full inspection of your units. This is beyond DIY maintenance: specialist tools and knowledge of the refrigeration circuit are required. JMGT offers this as a one-off service or within a maintenance contract.

Warning signs: call service immediately

Certain signals indicate an imminent fault and must be reported to service immediately – not when the unit has completely failed. Acting early prevents food loss and often saves repair costs.

Temperature rises unexpectedly (more than 2°C above the set point)
Unusual or different noise from the compressor
Ice maker produces less or incomplete ice cubes
Frost forming in the wrong place (inside rather than on the evaporator)
Water stains underneath or alongside the unit
Error codes on the display (Hoshizaki Advance has detailed error messages)
Noticeably high energy consumption (more than 20% above previous months)

Maintenance contract: what you get

A maintenance contract at JMGT for Hoshizaki units costs on average €175 to €425 per year depending on type and number of units. This is generally cheaper than a repair outside the contract and ensures HACCP requirements are met.

How often does a Hoshizaki ice maker need to be cleaned?

A Hoshizaki ice maker must be fully disinfected at least every 6 months, in hard water areas every 3 months. Daily: rinse storage bin with hot water. Weekly: clean filter grille and drip tray.

How often does the condenser of my Hoshizaki refrigerator need to be cleaned?

The condenser must be vacuumed or blown out with compressed air every 3 months. A dirty condenser increases energy consumption by 15–30 per cent and is the most common cause of compressor failure in Hoshizaki units.

What do I do if my Hoshizaki stops cooling?

Check first: 1) is the condenser clean, 2) does the door close properly (check door seal), 3) is there sufficient ventilation around the unit (minimum 5 cm clearance). If it still does not work: call JMGT for service – do not attempt repairs yourself, as this will void the manufacturer warranty.

How long does a Hoshizaki last with good maintenance on average?

With proper maintenance a Hoshizaki refrigerator or freezer lasts 12 to 15 years, ice makers typically 10 to 14 years. Without regular maintenance (especially condenser and water filter) this drops to 6 to 8 years. Proper maintenance discipline doubles the service life.

Can I take out a maintenance contract with JMGT?

Do water filters on my Hoshizaki ice maker need to be replaced?

Yes, every 6 months or after 18,000 litres of water throughput. A saturated water filter leads to limescale deposits on the evaporator and reduced ice production. JMGT supplies original Hoshizaki water filters and handles replacement within the maintenance contract.
