Best combi oven for care homes:
what should you select on?

A care kitchen sets different requirements from a restaurant. Cooking performance is not the deciding factor; auditability, continuity and robustness against a changing rota are. This guide runs through the criteria we use to select a combi oven for an institution, and where procurement gets stuck in practice.

In short

In care, select on three things: can the unit log its process for your HACCP file, does it self-steer enough to stay consistent with changing staff, and does meal service keep running if something fails. That last point argues for two smaller units more often than for one large one. In most care kitchens this lands on an iCombi Pro for the main line; with a settled team on fixed protocols a Classic is enough.

Why a care kitchen chooses differently from a restaurant

In a restaurant you buy a combi oven to cook better and faster. In a care home you buy one to safeguard a process. The meal has to reach the ward at the same time and the same temperature every day, demonstrably safely prepared, even when the regular cook is off sick and an agency worker is standing there. That shifts the weighting: self-steering and record-keeping outweigh the last degree of culinary finesse.

Then there is the production model. Many institutions work cook-chill: cook centrally, chill fast, regenerate on the ward. The unit then needs to do more than cook; it has to bring whole trolleys reliably up to temperature without drying out the outer portions. That is a different load from à la carte, and it drives the sizing.

The eight criteria we work through

Auditability

Can the unit log core temperature and process history and export it? In care this is not a nice-to-have but the backbone of your HACCP file.

Self-steering with changing staff

The less craft knowledge a preparation demands, the smaller the effect of a changing rota on quality. In care this is often the strongest argument.

Regeneration capacity

With cook-chill you load whole trolleys at once. Count trolleys per service point, not meals per day.

Modified-texture and diet lines

Pureed and adapted consistencies need separate, smaller runs. Two units make that far more workable than one large one.

Cleaning without handling chemicals

Fully automatic cleaning with sealed cartridges limits contact with detergent on a floor where residents move around.

Heat and noise output

Ward kitchens are small and poorly ventilated. Ask for heat output and noise level before the unit arrives.

Service coverage and response time

Meal service cannot be postponed by a day. Record who attends, within what time, and whether parts are held locally.

Maintenance cost over ten years

Budget for detergent, descaling and wear parts, not just the purchase price. That is also the figure a buyer wants to see.

From the field

What we meet most often in institutions is not a badly chosen unit but a unit that is too big for how the kitchen actually works. There is one 20-1/1 where two 10-1/1s should have stood: cooking and regeneration collide at the same moment, modified-texture meals have to squeeze in between, and when the unit is being serviced the whole meal service stops. At one site where we reworked the layout, capacity on paper did not change, but the eleven o’clock crunch disappeared because two lines could run side by side. So when you read a quote, do not only ask how much fits in, but when what has to go in.

Procurement and service

In an institution the purchase runs through procurement more often than through the kitchen, and the conversation shifts from cooking to terms. At minimum, record who provides service, within what time someone attends, and whether common parts are held locally. Which combi oven suits a care home best?

In a kitchen with changing shifts and agency staff, that is the difference between consistent quality and daily variation. If you run a settled team on fixed protocols, an iCombi Classic is often enough.

How does a combi oven help with HACCP records?

Modern combi ovens log the core temperature and the course of every cooking process and let you export that data. You then back your HACCP file with machine records rather than handwritten sheets. When buying, check how the data comes out, who can access it and how long it is retained; those are the questions an auditor asks.

Which size fits how many meals?

As a rule of thumb: up to around 80 meals per service a 6-1/1, up to around 150 a 10-1/1, and above that a 20-1/1 or two smaller units. Regeneration needs more capacity per meal than cooking from fresh, because you load whole trolleys at once. So count trolleys per service point, not meals per day.

One large unit or two small ones?

In care, two smaller units often win. You can separate cooking from regeneration, run modified-texture meals apart, and a breakdown does not stop meal service. That last point weighs more heavily than in a restaurant: service cannot be postponed by a day.
