Staff and turnover
This is the most decisive factor. The iCombi Classic requires your chef to know which programme to select, which temperature suits which product and how long it takes. An experienced chef handles this easily. But with staff turnover or less experienced employees, the Classic more frequently leads to inconsistent results.

Consistency and quality assurance
The iCombi Pro continuously measures core temperature, recognises how full the oven is and adjusts mid-cooking when the door is opened. The Classic does not: when you open the door, the oven loses heat and steam, and the unit does not correct automatically. For HACCP-critical environments such as care facilities, this is a relevant difference.

A restaurant that prepares the same fifteen dishes every day benefits less from Pro automation than a catering company that cooks a different menu every day.
