Buying a commercial freezer:
what should you look for?

A freezer is rarely bought right twice. Most poor purchases come not from the wrong brand, but from choosing capacity in litres and overlooking the climate class. This guide walks through the five points that make the difference in practice.

In short

Choose a commercial freezer on usable GN capacity, not gross litres. Then look at the climate class: in a hot kitchen that is exactly where cheap cabinets fail. Go for R290 refrigerant, forced-air cooling and automatic defrost, and allow the space the machine compartment needs to draw air. For most kitchens that comes down to a GN 2/1 cabinet in climate class 5, single or double door.

First the question: do you actually need an upright freezer?

An upright freezer is storage. It holds volume on a small footprint. If what you mainly need is freezing capacity at the workstation during service, a freezer counter often makes more sense: less volume, but a worktop and direct access. See freezer counters

1. Capacity: count GN positions, not litres

Litres say little. What counts is how many GN 2/1 pans or shelves you can fit and how many of those you can genuinely fill without blocking airflow. With forced-air cooling the air has to pass the product; pack the cabinet solid and the cold air never reaches the rear pans, so the temperature climbs. Always allow ten to fifteen per cent of margin on paper.

2. Climate class: where cabinets fail in hot kitchens

The climate class tells you the ambient temperature and humidity the cabinet was tested at. Class 3 assumes around 25 degrees. That is fine in a separate store room, but behind a cooking line or in a kitchen without good extraction the temperature climbs easily to 30 to 35 degrees in summer. A cabinet chosen too lightly then runs continuously: higher electricity use, more wear on the compressor, and in July a freezer that no longer holds core temperature.

We therefore recommend a higher climate class as standard. 3. Refrigerant and energy use

New commercial refrigeration now runs almost exclusively on R290, or propane. It has a very low global warming potential, which makes it future-proof under European F-gas rules, while older refrigerants such as R404A are being phased out. Buy a cabinet on an outdated refrigerant today and you are buying a service problem for five years from now.

On consumption: a freezer runs 24 hours a day, so the gap between an efficient and a mediocre cabinet adds up substantially over a year. Always ask for the stated annual consumption and set it beside the purchase price before deciding on price.

4. Build: the details that shape daily use

These are the points we work through on every quote, because they decide how the cabinet holds up over ten years:

Forced-air cooling

Delivers an even temperature all the way to the back and recovers faster after the door opens. For freezing in a professional kitchen it is almost always the right choice.

Automatic defrost and evaporation

Without automatic defrost, ice builds on the evaporator and capacity drops. Evaporating the defrost water saves installing a drain.

AISI 304 inside and out

Stainless steel inside and out is the norm in a kitchen cleaned daily. Look for rounded internal corners too.

Door seal and hinges

The first component to wear and the quietest energy waster. Check that seals are separately available and whether the door swing can be reversed.

Room for the machine compartment

The condenser has to draw air. Slotting a cabinet tightly into an alcove costs capacity and service life. Allow free space on the intake side.

Castors or feet

Castors let you clean underneath, which helps at a hygiene inspection. In heavy installations, adjustable feet are more stable.

From the field

The freezer fault we are called out to most often is not a fault. It is a cabinet standing too close to a wall or next to a range, with a condenser packed with dust and grease. At a restaurant near Zutphen the freezer was built into an alcove of exactly cabinet width; the owner suspected a failed compressor because it would not get below minus eighteen in summer. After pulling it clear and cleaning the condenser it ran normally again and consumption dropped visibly. That is exactly why we ask, before delivery, where the cabinet will stand and what stands next to it. A spec sheet knows nothing about the wall you push it against.

Frequently asked questions

What freezer capacity do I need?

As a rule of thumb, allow roughly 100 to 150 litres of usable freezer volume per hundred covers per day, depending on how much you prep and how often you order. Note that usable is not the same as gross. Shelves, air ducts and clearance around the evaporator quickly take ten to fifteen per cent. So count GN 2/1 positions rather than litres alone.

What does climate class mean on a freezer?

The climate class states the ambient temperature and humidity at which the cabinet still holds its temperature. Climate class 3 is tested to around 25 degrees. What is the difference between an upright freezer and a freezer counter?

An upright freezer is storage: high volume on a small footprint, usually with GN 2/1 shelves. A freezer counter puts freezing capacity at working height with a usable worktop above it, but with less volume. Most kitchens combine the two: the cabinet for stock, the counter for what you need during service.

How long does a commercial freezer last?

With normal use and annual servicing, ten to fifteen years is typical. What shortens service life in practice is almost always the same trio: a fouled condenser, a worn door seal and a placement that is too warm. All three are avoided with one maintenance visit a year.
