Is a used Rational
reliable?

The honest question behind every used purchase. The answer does not depend on the build year, but on three things: how hard the unit has run, which wear parts have been checked, and whether anyone fully tested it before it reached you.

Yes, provided it has been properly checked. A Rational is built for a long service life, and the parts that actually wear out (door gasket, core probe, valves, cleaning pump, steam generator) are all replaceable. So you do not buy reliability with a build year, but with transparency: hour count, fault history and a demonstrably checked and tested unit. Everything we sell is checked and tested by our own technicians.

Why a Rational in particular suits a second life

Not every brand of kitchen equipment is suited to a second life. Rational is, for three reasons. First, the heavy construction: a stainless steel cabinet, welded seams and components designed for daily professional use. Second, the manufacturer keeps service parts available for many years, including for generations before the iCombi. Third, the machine is designed to be read out: hour count, cooking cycles, cleaning cycles and fault messages are stored in the service menu.

That last point is the most important one in this article. With most used kitchen equipment you buy a black box. With a Rational you can make the complete usage history visible. A seller who will not show you that data is the real warning sign, not the build year.

What actually wears out on a combi oven?

You judge reliability component by component, not unit by unit. These are the parts that determine condition in practice.

What we see in our own workshop

We take in Rational units every week and strip them down in our workshop in Hengelo, the Netherlands. The pattern is strikingly consistent: the unit itself is almost never the problem, but the previous owner’s maintenance often is. The two things we find most often are limescale at businesses that ran without a water softener in a hard water area, and a door gasket that was used for years past its useful life. Both are fixable, but they determine how much work goes into a unit before it can leave the building again.

The second thing we see consistently: the build year tells you little. We have taken in ten-year-old units from a lunchroom that looked better inside than four-year-old machines from a seven-day production kitchen. The hour count and the cleaning history tell the real story. That is why, when buying in, we always read out the service menu before discussing price.

What follows as standard: read out the fault history, assess the steam generator and heat exchanger for limescale, retest sensors and the core probe, assess the door gasket and hinges, run through the cleaning system and complete a full test cycle with steam, convection and combination. Anything that is not right comes out. If a unit does not pass that test, it does not go on sale but becomes a parts donor.

How long does a Rational last?

With normal hospitality use and regular maintenance, a Rational typically lasts ten to fifteen years. That makes a five to eight year old unit with a moderate hour count interesting: there are usually years of use left in it. The rules of thumb below help translate hours into practice.

The risks that are real

An honest article also names what you give up. First: the remaining service life is shorter than with a new unit, however well it has been checked. Second: you are tied to the software generation of that unit; features Rational introduced later will not be added retroactively.

And the biggest risk of all: buying a unit without access to the hour count and fault history, from a party that never opened the machine themselves. In that case you really are buying a black box. You reduce that risk by buying from a party that checks and tests the unit itself and shows you the data it read out.

Used or new: the short decision rule

Choose a used unit when the lowest investment is decisive, when you need to move fast (from stock rather than factory lead time), or when you are adding a second unit alongside an existing machine. Choose new when you want the latest software generation and full manufacturer warranty, or need a configuration that rarely comes up used.

Is a used Rational as reliable as a new one?

A fully checked and tested unit comes very close to a new one. The cooking cabinet, the sensors and the controls work identically. The difference is in remaining service life and software generation, not in cooking quality. Reliability depends mainly on what was inspected and replaced before sale, and far less on the year on the rating plate.

How many operating hours can a Rational handle?

Under normal hospitality use a Rational typically lasts 10 to 15 years. Hours tell you more than the build year: a unit from a lunchroom with limited output is often in better condition after ten years than a four-year-old machine from a seven-day production kitchen. Always ask for the hour count, which is stored in the service menu.

Which parts fail first on a Rational?

Are spare parts still available for older Rational units?

Rational keeps service parts available for many years, including for the generations before the iCombi (SelfCookingCenter, CombiMaster Plus). For the common models we sell, parts supply is not an issue in practice. On very old units the lead time for a specific part can increase, which is something we factor into what we buy in.
