Hoshizaki vs. Scotsman vs. Manitowoc:
which ice machine should you choose?

Three brands that come up in almost every ice machine comparison. All three make good ice. The difference sits in the evaporator technology, in which ice shapes they handle, and above all in who attends the unit when it stops.

Choose Hoshizaki for service life and trouble-free running on hard water; the brand is widely represented and parts arrive fast. Choose Scotsman when the ice shape itself is the product, such as gourmet or nugget ice behind the bar. First, honestly: who wrote this?

JMGT supplies Hoshizaki and services it in-house. We would rather say that up front. At the same time we meet Scotsman and Manitowoc machines in kitchens we take over or refit, and we have had enough of them open over the years to know where they are strong. So this comparison is written from a preference, but a reasoned one.

The three brands at a glance

Hoshizaki is an independent Japanese manufacturer with its own European organisation. It builds both ice machines and commercial refrigeration, and is widely present across the Benelux, partly because the former Danish brand Gram was absorbed into Hoshizaki. The ice side runs in three lines: the IM series for full cube ice, the KM series for crescent ice and the FM series for flake and nugget ice.

Scotsman is American in origin but produces for Europe from Italy and has belonged to Ali Group since 2012. The brand has distinguished itself through ice shapes: gourmet ice, nugget ice, flake ice and more specialist variants. If the ice is part of your presentation, Scotsman is a serious candidate.

Manitowoc Ice is an American heavyweight with a very broad model range, from small undercounter units to heavy modular systems. The brand was sold by Welbilt to Pentair in 2022 as a condition for Ali Group acquiring Welbilt. In North America Manitowoc is a default choice; in Europe the dealer and service network is markedly thinner than Hoshizaki’s.

The real technical difference: the evaporator

The evaporator is the plate on which the ice forms, and in practice it determines how long an ice machine lasts. Hoshizaki uses stainless steel evaporator plates; most competitors use copper plates with a nickel or tin coating. That coating works excellently, until after years of descaling and cleaning it lifts locally. From then on the ice releases less cleanly, output drops and cleaning becomes a recurring problem.

Across much of North-West Europe this is not a theoretical point: the mains water is medium-hard to hard, and that is exactly where descaling happens often and aggressively. A stainless steel plate takes that without consequence. It is the main reason we recommend Hoshizaki for operators who want their ice machine to run for ten years or more. From the field

We attend ice machines ourselves, and the pattern we see most often has nothing to do with the brand: there is no water filter fitted, or the filter has not been changed in years. At a hotel in the Achterhoek we suspected a faulty machine producing only half its output; it turned out to be a clogged filter plus a condenser choked with dust because the machine stood too close to the wall. After a clean and a new filter it ran at capacity again. So do not get drawn into brand debates before the basics are right: filtered water, air around the condenser and a fixed cleaning rhythm matter more than the name on the door.

When the ice shape decides

For a restaurant, hotel or care home, full cube ice is almost always the right answer: it melts slowly, does not water down the drink and chills reliably. That is what the Hoshizaki IM series is built for. If you run a concept where the ice is a visible part of the product, it is different. Gourmet ice in a whisky glass, nugget ice that guests like to chew, or flake ice on a fish counter: there the shape is not a detail but the reason for buying.

Service coverage: the criterion that only counts once it is too late

An ice machine is one of the few kitchen appliances that runs seven days a week and whose failure is immediately visible at the bar. At that point spec sheets no longer matter; two questions do. Who attends, and how fast does the part arrive? Hoshizaki is widely represented across the Benelux; we handle service with our own technicians and typically deliver new units from stock within 24 to 48 hours.
