Type first, then brand: three main categories
A professional dishwasher comes in three main types: undercounter for smaller kitchens, hood machine for medium to large volume and conveyor machine for very high capacities. The right choice is based on peak load in racks per hour, not daily turnover.
Undercounter (front-loader): 25–35 racks per hour. Compact, fits under worktop. Ideal for small restaurants, bistros, staff kitchens up to 80 covers per service. Examples: Winterhalter UC-M, Hobart FX-10.
Hood machine (pass-through): 60–100 racks per hour. Freestanding with lift-up hood. For restaurants from 80 covers, hotels, catering companies, staff catering. Examples: Winterhalter PT-L and PT-XL, Hobart Premax AUPL.
Conveyor machine: 100–500 racks per hour. Pass-through system for hospitals, large catering operations, factory canteens. Examples: Winterhalter MTF and Multistar, Hobart FTPi.
Winterhalter: the market leader
Winterhalter is a German family company and market leader in commercial dishwashers in Europe. The PT series (hood machine) and MTF series (conveyor) are known for their energy efficiency, water recycling and strong service network. Premium positioning, premium price.
Strengths: lowest consumption in its class (2–3 litres of water per cycle with PT-XL), VarioPower adjusts pressure to the degree of soiling, ConnectedWash for remote monitoring, intuitive cleaning indicators for staff. The service network is one of the densest.
Weaknesses: higher purchase price (15–25% above Hobart), spare parts and accessories at premium price, training required for optimal use of advanced features.
Choose Winterhalter when:
- You prefer a service-close partner
- Low running costs matter more than purchase price
- You need HACCP logging and remote monitoring
- Your staff has little technical knowledge (intuitive operation)
Hobart: robust build, lower price
Hobart (part of the ITW Food Equipment Group) is one of the oldest names in commercial kitchen equipment with more than 125 years of history. The Premax series offers an excellent price-to-performance ratio with a strong focus on reliability and easy maintenance.
Strengths: lower purchase price (10–20% below Winterhalter), modular design (parts easier to replace), Premax AUPL hood machine comparable in capacity to Winterhalter PT-L at a lower price, strong presence with wholesalers.
Weaknesses: higher water consumption per cycle (3–4 litres vs. 2–3 for Winterhalter), smaller service network, more limited connectivity features, older user interface on some models.
Choose Hobart when:
- Purchase price weighs more than total running costs
- You carry out your own maintenance and want easy parts access
- You are looking for a hood machine for medium volume
- Robust construction matters more than efficiency
What it delivers for your kitchen: calculation example
A modern professional dishwasher saves on average €1,200 to €2,500 per year compared to an 8–10 year old model through savings on water, energy, cleaning agents and working time. For a kitchen running 200 days per year with 100 cycles, that is 15–25 m³ of water and 2,500–4,000 kWh of electricity per year.
In addition: an efficient machine with thermal disinfection produces drier racks – this saves up to 5–10 minutes of hand-drying per shift. With two shifts per day that is 60 hours per year – almost two working days.
With energy-efficient models, the net investment is typically recovered within 12 to 24 months.

For 70 per cent of commercial kitchens a Winterhalter PT-L or PT-XL (hood machine) is the best choice. For budget projects and care facilities looking to save on purchase price, Hobart Premax is a strong second candidate. Both brands meet HACCP requirements without difficulty.

What is the difference between an undercounter and a hood dishwasher?
An undercounter dishwasher (front-loader) has a door at the front and fits under a worktop – suitable for max. 30 racks per hour. A hood dishwasher is freestanding with a lift-up hood, with a capacity of 60–100 racks per hour. For restaurants up to 80 covers an undercounter is sufficient, above that choose a hood machine.
Which brand is more durable: Winterhalter or Hobart?
Both last 12 to 15 years with good maintenance under intensive use. Winterhalter has historically had a slight edge on technical service life and service network. Hobart scores on modularity (parts easier to replace) and purchase price.
How much water and energy does a professional dishwasher use?
A modern Winterhalter PT-XL or Hobart Premax uses 2 to 4 litres of water per cycle (compared to 12–15 litres with older models) and about 0.5 kWh per cycle. At 100 cycles per day that is 20 m³ of water and 18,250 kWh per year – nearly equal for both brands.
Which dishwasher is suitable for a care facility?
For care facilities choose a model with thermal disinfection (minimum 82°C final rinse temperature) and automatic HACCP logging. Winterhalter PT-XL and Hobart Premax FXLS offer this as standard. Additionally optional: demineralisation system against limescale.
What does service and maintenance cost per year?
A maintenance contract costs on average €350 to €750 per year for a hood machine, including 2x preventive maintenance, dosing calibration and drain pump inspection. Repairs outside the contract: €95–150 call-out costs plus labour and parts.
