Installing a combi oven:
what you need to know

A combi oven is not a plug-and-play appliance. The right prerequisites for power, water, drainage and ventilation differ by model and kitchen. JMGT assesses this upfront – free of charge, on site.

What matters

Every combi oven installation involves four aspects. The exact specifications that apply depend on the model and your situation.

  • Power

    Wattage and connection type (single-phase or three-phase) depend on capacity and model. Wrong circuit = not usable. With a replacement installation you need to check whether the existing circuit is still adequate.

  • Water

    Hardness and pressure determine whether water softening equipment is needed. Water that is too hard = limescale damage and risk of warranty loss.

  • Drainage

    Height, diameter and heat resistance are model-dependent. Do not simply connect to the sink.

  • Ventilation or extraction

    Required for hot steam. Sometimes a condensation hood is sufficient, sometimes a full extraction system is needed. Building regulations and HACCP place additional requirements on air supply.

Why you should not try to work this out yourself

The specifications differ by Rational model. An iCombi Pro 6-1/1 has different requirements from a 20-2/1. A replacement installation in an existing kitchen requires something different from a new-build situation. And local water hardness, available consumer unit and HACCP requirements make it more complex than a data sheet suggests.

A miscalculation quickly costs several thousand euros in remedial work. Plus the hours during which your kitchen cannot produce.

Frequently asked questions

Can I plug a combi oven into a standard socket?

Almost never. Professional combi ovens require a three-phase power supply. Which circuit and what fusing is needed depends on the model, capacity and usage intensity. JMGT assesses this on site so you can be sure the installation fits your existing situation.

Do I need a water softener?

It depends on the hardness of your mains water and the combi oven model. Water that is too hard causes limescale damage and can void the manufacturer warranty. We measure water hardness during the kitchen check and advise whether a softener makes sense.

What drain does a combi oven need?

Hot steam and condensate must be discharged through a heat-resistant drain. Height, diameter and positioning are model-dependent. Incorrect connection causes odour nuisance and in some cases warranty loss. JMGT supplies the correct connection with every installation.

Do I need a ventilation hood?

Sometimes a condensation hood is sufficient, sometimes a full extraction system is required. This differs by location, combi oven type and cooking intensity. Building regulations and HACCP rules place additional requirements on air supply. We assess what is required in your situation.

How much clearance do I need to leave around the oven?
