Standard baking trays fit directly, without repacking. No wasted space like a GN cabinet with the wrong runners.
Adjustable climate
Adjustable humidity prevents dough from drying out and crust forming. Important for quality and weight.
Manage dough
Controlled cooling and retarding lets you plan the proving and work ahead, with calm in the early morning.
R290 and EIA
Energy-efficient R290 versions are often EIA-eligible, up to 40 percent deduction. JMGT supplies the documentation.
